These Healthy Nut & Seed Energy Cookies are a delicious mix of oats, nuts, seeds, and dried fruits. They are naturally chewy, slightly crunchy, and perfect for breakfast, tea time, or a quick energy-packed snack during the day.

Ingredients

  • 2 cups rolled oats
  • ½ cup chopped almonds or cashews
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ½ cup dried cranberries or raisins
  • 2–3 tablespoons honey
  • 2 tablespoons peanut butter or almond butter
  • 1 ripe banana, mashed
  • ½ teaspoon cinnamon
  • A pinch of salt

How to Prepare

Preheat the oven to 180°C and line a baking tray with parchment paper.

In a large bowl, combine the rolled oats, chopped nuts, pumpkin seeds, sunflower seeds, dried cranberries, cinnamon, and salt.

Add the mashed banana, honey, and peanut butter. Mix everything well until the mixture becomes sticky and holds together.

Take small portions of the mixture, shape them into round cookies, and place them on the baking tray. Press them gently to flatten.

Bake for around 12–15 minutes, or until the edges become lightly golden.
